Quick and healthy pita pizza

Do you ever have one of those work days where most of your hours are occupied by meetings but you know you have to update that presentation and send it to your boss by end of day. So you work through lunch and every single minute between meetings just to get that presentation in on time. You then dash out of the office and run (because you left too late to walk) a block to the closest subway station just to catch your train home. Wow. I feel exhausted just writing that. But I sometimes have days like that and I’m sure you do too.

By the time you get home cooking is probably the last thing on your mind. But before you reach for your phone to order that pizza please let me suggest a healthier alternative: pita pizzas! It’s delicious, healthy, quick, and so crazy easy to make. Not only will your body thank you for consuming something good for you but you’ll have more time in your evening to decompress. It’s my weeknight go-to after a really long day and I always find it so satisfying.

Ingredients
1 whole wheat pita bread
3-4 tbsp of your favourite marinara sauce
¼ cup of tex mex cheese (I like tex mex because of the extra flavour but you can use mozzarella)
¼ cup of halved cherry tomatoes
¼ cup diced mushrooms
¼ cup of diced bell peppers
1 tbsp of torn basil leaves to sprinkle on top

Directions
Pre-heat your oven to 350 degrees F.
While your oven is preheating, top your pita with the marinara sauce.
Arrange your diced mushrooms, bell peppers and your cherry tomatoes on your pita.
Sprinkle on the cheese and pop it in the oven for 15-20 minutes or until the sides get golden brown and the cheese is bubbly!

Sprinkle on your basil leaves, slice it into 4 pieces or just pick up the whole thing and take a big bite! But make sure you let it cool down a little first. This recipe serves one but simply double up the ingredients to serve two people.

What I love about this recipe is that you can top your pita pizza with just about anything you can think of. The recipe above is all veggie but I’m no stranger to topping it with cooked chicken or sausage. Also, I don’t always wait for a busy day to make this recipe either. I’ll make it on any day I’m craving for something crispy topped with cheese but that is still pretty healthy!
